Talking about the Colombian cuisine is talking about a 470 years old tradition that keeps constantly evolving but is always attached to its Hispanic and indigenous roots. When you travel trough the different regions you will never repeat the same meal that you found in another region, so if you travel through the 32 Departments you will taste an endless amount of meals; meals each with their own history.
One of the most famous meals is el Ajiaco, basically a chicken soup; the name derives from the Aji or Chilly but the soup doesn't contain any spicy element at all. Another dish and probably the most popular is la Bandeja Paisa- a dish that was made so the Colombian cowboys could have a lot energy due the prolonged demands of working with cattle. This dish contains high levels of cholesterol due to the fried pork and the red meat, but still is delicious.
Now talking about cooking, I want to say the Colombian Cuisine is not hard to prepare. It is just matter of practice as is every art.
